Choosing Mexican Food Catering For Your Next Event

By Ina Hunt

There is an event to plan and organizers seek out something different than the usual, traditional choices. Looking into Mexican food catering may be just the option you are seeking for your special gathering of customers, friends, family, employees or clients. These items are very simple and easy to prepare and can be much less costly than other choices.

The very first step is to decide whether the menu selections will be served on-site or off-site. On-site is when the party is held in the same location that the selections are prepared. Off-site is when the items must be transported to anther location such as a church hall, party room, school or a private residence.

Decide whether plated items or buffet-style service is required. Plated meals are served by waiters after guests are seated at tables. Buffets are long, narrow, skirted tables with trays and chafing dishes filled with prepared items. Guests get in lines, pick up plates and serve themselves from the various hot and cold foods displayed.

A choice of cold menu items can include chips and salsa, fresh fruit displays, and taco salads. If you have extra funds, you may wish to add shrimp, oysters, crab claws and ceviche on ice to the selection. If these selections are going to be on the buffet table for long periods of time, they should be kept cold for safety reasons and for maintained flavor.

Enticing hot items can include a larger variety of snacks and meal suggestions such as nachos, tacos and chalupas, enchiladas, quesadillas, tamales, tortilla soup, menudo, flautas, re-fried beans, grilled vegetables, Spanish rice and much, much more. Maintaining the heat in these dishes can be a challenge for any catering business. Large warmers or trucks with ovens may be needed to assist with the process. If these items are served buffet-style, they are placed in a two-inch stainless pan and then put into a chafing dish with sterno fuel or warming candle.

Desserts could consist of caramel flan, buneullos, Mexican wedding cookies or cinnamon ice cream. Serve beverages such as margaritas and ethnic beer for the adults and Mexican bottled sodas for any children in the gathering. For large crowds, rent a machine to make the frozen regular and strawberry margaritas. Always have brightly colored garnishes for both the sodas, frozen drinks and the beer including wedges of limes and lemons, orange slices, stemmed cherries and pineapple wedges.

There are so many wonderful items that can be used to decorate these events. Use brightly colored candles in jars in the middle of a sombrero for guest table centerpieces. Drape Mexican blankets across a lengthy buffet table to give it color and excitement. Hang streamers and pinatas from the ceiling for extra impact. Paper flowers can be used almost anywhere to add bursts of bright color and charm.

When putting on an event such as this, be assured that it is fast, casual and relatively inexpensive compared to other event choices. Your guests will enjoy everything you offer and the foods selected will appeal to almost any appetite. Choose what your crowd will enjoy the most and set up a floor plan that provides ease of movement. Your party is sure to be remembered for the weeks and months to come.
