People are into eating foods and specially those from other countries due to their wants of trying to eat something new. Luckily, visiting other countries is not necessary for tasting these dishes because cities such as Baltimore have foreign restaurants available. But some restaurants do not offer food with an authentic taste than what it has originally back at its home country. They have the tendency to change its flavors to fit better with the locals by fusing the flavors most people there like. One of the things you can do is to check if the place is crowded with patrons and more specially if there is a waiting list outside. This would show that they serve delicious food because people want to come inside. If the majority of the patrons are Chinese then that is better because it indicates that the taste is identical to what they have back at home.

The reason is that those traveling abroad tends to look for something familiar and would prefer those serving authentic tastes. Try seeing what is on their table and order those that look and seems delicious. You may have a better chance of getting a food which most Chinese people like and would likely have real flavors as well.

A place with many tables but not have many guests will probably have food that are not as fresh as you hope they would be. Likewise, those offering takeout with no tables would likely not create authentic dishes. It is also important to eat somewhere that looks clean and avoid those that are not, no matter what kind of restaurant they are.

Research the regional specialty the restaurant has because with a place as large as China, its different areas have mastered different dishes. Specialties of northern region are dumplings, noodles and steamed buns because these areas commonly grows grains. Southern region have vegetable dishes and rice as their specialty with some international influence mixed to them.

Southern ones have sea foods like steamed fish as specialties with their light cooking and using of copious ginger. The landlocked southwestern region is not a good place for ordering fishes and shrimps though freshwater variety is available. Their dishes tend to have a spicy flavor and along with prickly ash which a numbing and tingling sensation is left to the tongue.

Some restaurant names are based on from what region their specialties are from though be careful with those using names of cities. They might not actually represent what the real taste coming from that city and are just used for brand recognition only. The name does not represent well about the dish so look at their ingredients and the method of cooking them.

The original names tend to have more poetic meaning than the literal translations. Some of them have colorful history which describes how they taste. And avoid from buffet restaurants because the freshness usually suffers from the items being heated for a long time.
