How To Prepare Ace Organic Veggie Burgers

By Janine Hughes

Gone are the days when vegetarians, especially those who insisted on eating everything organic, were mocked and ridiculed. Today, ordering organic veggie burgers at the local fast food restaurant is practically mainstream. Note that not all commercially-prepared veggie burgers are better for you than good old-fashioned ground beef. To be sure your burger is the best and most natural that nature can offer, make sure you know what you are eating.

Organic farming used to be just a matter of avoiding chemical fertilizers and pesticides. Now, it's a national government issue, with countries insisting on farmers using techniques for maintaining biodiversity, conserving natural resources and ensuring ecological balance. It's not just about cow manure any more!

Many commercial vegetable patties use soy as a main ingredient. In many cases, the soy is extracted using hexane, a carcinogenic hydrocarbon. Hexane has been linked to both neurotoxicity and brain tumors. The FDA has not yet set a safe limit on the amount of hexane that food producers may use so nobody really knows how much is safe.

In the effort to make food more resistant to pests and increasing crop yields, somehow, both the flavor and nutritional value of commercially grown fruits and vegetables appear to be on the decline. This is partly down to selective breeding, methods of which are becoming more and more technologically advanced. Organic produce retains both nutritive value and taste.

Making your own vegetarian patty mixture is healthy and fun. You can make it up before going to dinner parties or barbecues. There are loads of recipes available, all of which have an infinite number of variations. Not all are based on soy, but if you do decide to include this as an ingredient, make sure it does not contain hexane.

Nut-based mixtures are popular, healthy and tasty. Toss a handful of shelled nuts into the blender or food processor, add a few vegetables and maybe an egg to hold it together if you are not a vegan. Lentils also make an excellent base for a patty mixture. Find a recipe or two to guide you on the basics and have fun experimenting.

Potatoes, either white or sweet, make an excellent bases for a patty mix. Add breadcrumbs, a few chopped vegetables, herbs and spices and there you go. Another recipe that is making the rounds uses quinoa as a base, along with sweet potato, chopped onions, cilantro, garlic, some basic Indian spices and coconut oil. These can be made ahead and placed in the freezer until needed.

Vegetable burger patties are healthy for everyone, not just vegetarians. Making your own patty mix is cheap, healthy and fun. Instead of individual patties, the mixture can be formed into a loaf. With growing interest in healthy diets like Paleo and Daniel, having a versatile vegetable burger recipe is a wise move. You can make them up with whatever you have in your larder on the spur of the moment. Your carniverous friends and family won't know what they are missing.
