One is to be used for preparation while the other one is cooling. And the remaining tray can be used inside the oven for cooking.

First thing that you need to know is you should make use of the heavy ones with a dull finishing. It should not be shiny. One issue that comes with this type is that it is more expensive than others.

As you can see, the rims and the height of the rims differ. You might be tempted to purchase the rimmed one. This is not advisable because it would not cook all of the things on the tray in an even manner. If you do have these types of sheets already, then you can make use of the bottom part as your new tray.

The dough would have to expand when it is subjected to fire. And because of this, you need to place the mix in regular space intervals. This would also mean that you need to make use of a bigger sized sheet. However, it should not be too big so that it would not affect the growth of the cookie.

As a beginner, you will have to encounter various types of sheets. You might easily get confused so you have to know which ones you should not use. It should not have a darker color since this would cause more burns and it is the usual reason why cookies become over browned.

It is also important to avoid the shinier ones. If it has a shiny texture then it would reflect light. And if this is the case, then it would be a problem for you because the temperature can increase. The cookies would get cooked faster than what you expected. Because of this, you will have an over browned result that is not really favorable for the taste buds.
