Selecting The Right Chilli Recipes For Certain Crowds

By Stella Gay

Many families need meals that will stretch the household budget and this is ever so true when there are lots of hungry people to feed at one time. When settlers headed West in wagon trains, stews were popular. As time passed, the cooks began to combine all sorts of ingredients. These chilli recipes were handed down to kin through the years.

People choose to add ingredients to these trail stews that certain people at a gathering will like. Some visitors are known to prefer foods that are livened up by spices that will burn the recesses of the mouth. Other people choose to prepare this type of recipe just to enjoy the rich sauce that seems to surround any other ingredient that is placed in the pot during the cooking cycle.

The availability of cooking ingredients changed along the route. Settlers always had a supply of rice on hand, but could fix these stews using beans like the kidney bean or Navy bean. People that had lived in colder climates were used to eating Northern beans. Today, most people make bean selection after the meat has been chosen.

Many cooks noticed that the taste of many stews were changed when the stew was cooked using a different method. The chilli instructions may not be perfect for pots of stew that are cooked in a slow cooker or crock pot, because less moisture is needed. Some flavor could be lost if the dish is prepared without the cover in place, allowing flavor to escape with the steam.

The sauces that form in the dish will come from a variety of sources. Some rustic varieties will feature canned or fresh tomatoes that are diced to add texture and add some body to the sauce. Most kitchen cooks will choose to squeeze and mash the whole tomatoes before tossing into the mix to create bite size morsels that are tender and full of flavor.

Including fresh vegetables will give cooks an opportunity to add a personal touch to the pot. In a southern stew, sweet onions are used, but red onions can add texture and color. Many chefs like to add a dash of lemon juice, and use scallions to provide depth to the creation. To give the mixture more body, a chef might choose to use fresh or dried parsley, and some chopped pieces of celery.

Many cooks will be alert when adding water to the pot because these stews are meant to be thick and hearty instead of thin and watered down. The method of cooking is very important when determining how much water should be added. Using a slow cooker will ensure that all food inside is moist and little water is needed to maintain the correct consistency.

Creating a suitable base for these hearty dishes will rely on dry ingredients and spices. Certain pots can be made using ground beef, or chunks of beef. Certain tastes in the crowd will prefer stews made with turkey or pork. All fat content in meat should be monitored to keep the contents from being greasy.
