When competitions are being held, however, the greatest concern is how the food will taste at the end of the event. The interior design will include racks that are in both horizontal and vertical positions. Some areas will be designed to keep food at eating temperatures without drying the meat out

Other cooks will custom order a grill that has exact measurements stated for the bottom areas of the grill where charcoal briquettes will be placed. Even distribution of these coals will ensure even heating over every area where the food is placed.
