These preservation methods are natural and do not affect the meat in any way.

Check the parts which the meat was cut from. The level of the tenderness of every meat cut varies with the place that it was cut from. Tender flesh is found around the rib, tenderloins, strip steaks, and the short loin. These areas have little exercise leading to the formation of least amount of connective tissues which are tough. Most of the prime cuts undergo a marbling procedure which involves removal of flecks of fat around the meat.

Choose a reliable seller. These kinds of products are not available in just any grocery that you come across. In most cases, they are sold in stores that are specialized in the sale of different kinds of meats. Make sure that the store has been approved by relevant authorities which are related to their practice. You should have a couple of places that you can compare and conclude on one which meets your expectations.

Look for any mark of quality in the packages. Most authorities are involved in the selling of meat has special marks that indicate whether particular products have met their grade. The mark is usually a purple stamp with the words USDA prime inside a shield shape. Grading is done with the request of the seller which is expected to be paid. This is different from meat inspection which is done in slaughterhouses.

Beware of your expenses. You do not have to spend a lot since these kinds of meats are expensive. You can get them at an affordable price if you decide to compare a variety of sellers. Conclude on someone with quality flesh even though the prices are quite low.
